"This recipe was originally in the LA Times. The story is that they are so good that they get sucked up like a vacuum cleaner! My neighbor brought some over to us and they were so rich, delicious and different, that I had to have the recipe. You make them like a bar cookie."

  • crust

  • 12 cup margarine or 1/2 cup butter
  • 1 (18 1/2 ounce) box yellow cake mix
  • 1 large egg
  • Top layer

  • 2 large eggs
  • 1 (8 ounce) package cream cheese, softened
  • 1 lb powdered sugar
  • 12 cup coconut, shredded
  • 12 cup walnuts, chopped

directions

  • In a large bowl, combine the cake mix, margarine and 1 egg until moistened.
  • Pat mixture into a 15 x 10-inch greased jelly roll pan.
  • Bake at 350° for 10 minutes.
  • Remove and cool while you make the top layer.
  • In large bowl, beat 2 eggs lightly.
  • Beat in cream cheese and powdered sugar.
  • Add coconut and nuts.
  • Spread mixture evenly over curst in pan.
  • Bake at 325° for 40-50 minutes or until golden.
  • Cool in pan on a rack to room temperature.
  • Cut into small squares or bars.

  1. I made this, using a yellow cake mix recipe from Zaar. Well worth trying. Very aptly named.

  2. A delicious cookie. I had to substitute for the coconut due to Kat's allergies. All I could think to use was miniature marshmallows and they worked surprisingly well. Next time I will try pecans instead of walnuts. I was short on time and did not bake the first layer separately. They came out slightly chewy on the edges and soft in the middle but still held their shape. Very nice. Thanks for a great bar cookie.

  3. An excellent and easy cookie. I will most definitely make again, BUT, I will lessen the sugar and double the coconut and walnuts. I think a pound of 10x sugar is too much. They little gems are extremely rich, but pair so well with a glass of milk.

  4. i promised DD we could make cookies today but forgot i was out of sugar. she was pretty upset and really wanted to make cookies so i found this recipe and actually had just about everything on hand. and OH MY THESE ARE GOOD! we're munching on a couple of these now and WOW! very well named LOL. we made them pretty much as directed except omited the nuts (i was out) and added chocolate chips (standard request from DH). the first layer was a little hard to spread in the pan even w/ oiled hands, so i sprayed some wax paper w/ oil and put that on top. then just smoothed out an even layer as easy as can be. these are pretty rich but i cut them in 1-1 1/2" squares and along w/ a glass of milk or cup of coffee they're perfect. next time i'll be sure to use the nuts and will probably keep the chocolate chip addition. it's pathetic but if there's no chocolate in a desert DH isn't a happy camper LOL!

  5. these were really good, a little sweet for my taste but the kids gobbled them right up. They deserve 5 stars for ease of making them. My 8 and 10 year old made them all by themselves and were so proud of their accomplishment
