"When I attended my first weight watchers meeting and the leader shared this recipe, my first thought was "right!". There was no way I was going to believe this was good, AND low in points. Eventually I had to try it though. Now my DH who wants nothing to do with pumpkin OR lite anything, had a fit over these cupcakes. Of course he still doesn't know the truth and I'm not about to tell him! (weight watchers points = 1) I did try making it as a cake in a 9-13 pan and the center stays way too moist, so I recommend the muffin method. Perfect for when nothing will do but chocolate! UPDATE: One reviewer suggested using 1/4 cup of water to get a more cake-like consistency and it works great. 1/2 cup of water will produce a denser and richer texture. Whatever you choose, enjoy!"

  • 14 - 12 cup water

  • Bake at 350°F in mini muffin tins for 30-35 minutes.

  1. These are fabulous! The consistency is decent and they stay moist for so long! Loved these! Thanks! Update. I made these a second time but added 1 cup water and 1 cup quick cooking oats and baked them for 25 minutes. I liked the consistency much more this way.

  2. I made these for my family and they all loved them! They were so easy to put together and no one even knew there was pumpkin in there. I also added mini chocolate chips to the batter just to be sure my kids didn't taste any pumpkin! I wanted a cake-like texture so I mixed in only 1/4 cup water with mine and the pumpkin and they turned out perfectly moist and puffed up just over the rim of the cupcake liner. I used my Kitchen Aid mixer and made sure to let the batter mix for 2 min so they texture was fluffy and light. I got 19 muffins using a regular size muffin pan so I'm estimating these are aprox. 3 pts each. Not bad and a nice healthy option for a treat for my kids! I was so excited at how good these turned out I shared the recipe with everyone at work! I'm going to try this with a spice cake mix next to make as a fall treat. Thanks for the recipe!

  3. I love these - here is the point confusion though - these are meant to be made with the MINI cupcake/muffin pans - with a yeild of 36 mini's - then you get one point each!The taste wonderful, no hint of pumpkin flavor just tastes like a yummy chocolate cupcake!!

  4. Just wanted to clarify the point value. Not all cake mixes are the same therefore the point value will vary depending on the mix you choose. As well, the Devils Food is one of the lower point cake mixes so check on-line with the recipe builder @ etools to get the actual point value of your recipe. One more thing, it is upsetting to see that while we are afforded the luxury of even having cupcakes on a diet.....some reviewers are still unhappy. Most diets consist of grapefruit, cottage cheese, boiled chicken and broccoli. Seriously!!!!!

  5. This is a very good recipe that I have made before. I have also tried different flavored cake mixes with great success, especially lemon if you like lemon flavor. But, according to my points calculator they are 3 points each. Darn!

It's just plain fun to spend time together whenever we can.<br><br>I started collecting cookbooks when my grandmother passed away. She had many old old cookbooks complete with her hand written notes, new special recipes she clipped out of different publications and yes, a few stains as well. I'd hate to think how much I've spent collecting different newer cookbooks over the years, and keeping them under control has always been a big problem for me.
